Potato Hotpot

INGREDIENTS
– Potatoes
– Beef or chicken
– 6 large tomatoes
– 1 medium onion
– 2 cloves garlic
– Ginger
– celery
– 2 Green Peppers
– 4 carrots
– Green Beans
– Beef cubes
– Salt
– Vegetable oil

METHOD
– Cut meat into chunks and put in a pot. Slice about one-third of the onion and add to the pot. Add water and salt and boil until meat is tender.
– While meat is cooking, peel the potatoes and if necessary halve bigger potatoes. Put in a pot, add water and salt and boil until potatoes are almost done. Takes about 20 minutes of boiling.
– While potatoes and meat are cooking, prepare the rest of the vegetables. Slice the remaining onions in half-moon shapes (half circles), chop garlic and ginger, cut sweet peppers into strips, peel and slice carrots into 1-cm thick strips, slice green beans, leeks, chop tomatoes.
– If the 20 minutes is up for the potatoes, turn off the stove but leave the pot on the stove.
Your meat should also be ready by this time and there should be a little stock left in the pot i.e. do not cook the meat dry. Now add some oil (about 4 tablespoons or less if you prefer) to the meat and stir fry the meat for about 5 minutes.
– Add onions, garlic and ginger, pinch of white pepper, beef cubes, salt and continue to stir fry for a further 5 minutes or so.
– Add in the tomatoes and fry, stirring regularly from time to time making sure to turn down the heat until colour of tomato changes and some of the oil separates from the mix.
– In the meantime, parboil the carrots and green beans with some salt in a pot.
– Add the vegetables (peppers, carrots, green beans) to the stew and mix well. Let it fry for a couple of minutes.
– Add the cooked potatoes to the mix and mix. Leave on stove for a few more minutes with heat turned off. Take the pot off the stove. Your Potato Hotpot is ready to be served.
